I don’t have a preselect time at which my wines will or would be released, there are a minimum of 24 months for non-vintages to a minimum of 60 for vintages. Particularity of the vintages: if not up to par, I won't release them. For me, a vintage must reflect a year’s condition, period.
Once the wine is ready, the other key aspect is the “dosage” – while the “liqueur of expedition” can boost some qualities of the wine, or round up the edges, it also masks a good part of it. And this is why maturity and acidity balance are so important for me. I want the wine to be true to what its terroir is.
My wine must retain their original pureness, crisp, tension that provide them with great length. Therefore, my priority is always to go with no dosage or “nature” when possible. The quest for balance, wholeness, will determine if we push a little more and go with Extra brut.
