ter·roir - /terˈwär/
"The complete natural environment in which a particular wine is produced, including factors such as the soil, topography, traditions and climate."
I looked for something that made sense, that would talk to me, with hills, views. So I searched for months a place I could get and not too far from people I knew and wanted to work with. Eventually I found a place, just a few miles north west from Epernay, in Venteuil, on the right bank of the Vallée de la Marne.
My champagne tells the story of these lands. Of rolling hills, clay, chalk and limestone soil plunging into the water of the Marne river. Of long, mild summer days, crisp, cold winters and misty fall mornings, of people who respect the land and have cared for it for generations.
This isn’t much, but it will be marvelous for a start, I remember saying to myself.
