Vinified in large inox steel tanks, full malolactic fermentation done, transferred into second hand oaked barrel for a minimum of 10 month. Stays on slats minimum of 48 month.
Chalk mostly, south east and east only. Soil is ploughed or sewn in grass so that it is invigorated and it reinforces its vitality.
Crystal clear pale yellow. The wine develops a fine, elegant and long-lasting mousse as you pour it in the glass.
Delicious salinity and iodized scent come out of the glass on the first nose. Then lime notes with exceptional freshness are starting to appear. The nose is very delicate, nothing exuberant, very refined. As the air comes in, it exhales light touches of white peaches, zesty citrus as well as hints of coriander.
A fresh effervescence on the first mouth. The acidity is incredibly well balanced, the minerality is the first thing you notice. It’s almost “chalky”. Then comes a bit of fruit: lime, citrus and kumquat notes. Crisp and vivid, all this being very subtle. It’s a clean, crisp, pure champagne that never gets tiring. As it opens up, grapefruit zest and herbaceous flavors become more precise on the final. The complexity of this wine will also reveal a light aftertaste of coconut water on the finish. It’s a beautiful, light and extremely well-balanced wine to serve with your gourmet or classic meals.
