Only mid hills selection, south exposure to allow for a maximum maturity. The clay rich soil is less dense in those area and chalk can be found as soon as 60 cm deep, allowing for a well-drained ground.
Light yellow copper with golden highlights. The wine develops a fine, elegant and long-lasting mousse as you pour it in the glass.
The wine reveals immediately a refreshing iodized scent. You can almost feel and taste the soil characteristics on the first smell. Limestone and chalk are dominant, it’s very mineral. Then as the wine opens and temperature rise, yellow stone and white fruits as well as hints of red berries are coming into play. Light citrus note is already perceptible.
The delicate effervescence is lively but smooth. This is a controlled zesty wine thanks to its natural acidity and this is especially remarkable and enhanced by the iodized texture of it. The frank vinosity of the wine gives an impression of strength and freshness, yet it is never harsh. The fruits, the yellow stones and apple soon join in a perfect harmony to balance the wine, making it almost suave. As you go, quince, white peach and citrus all mix up to finish with a refreshing slight after taste of mint leaves with a hint of macadamia nut.
